Spicy Jalapeno-Chipotle Coleslaw

Step 1:

Ingredients:

Chipotle Lime Aioli

1 cup Coronado Taste of Oils: Chipotle Olive Oil

2 large egg yolks at room temperature

2 garlic cloves, smashed

2 teaspoons sea salt

1 Tablespoon fresh lime juice

Method:

In a food processor, add egg yolks,salt, garlic & lime juice. Process until smooth. Turn on Food Processor & VERY SLOWLY begin to drizzle Chipotle Olive Oil into food processor. Extreme patience is needed. If you drizzle the olive oil in to quickly, the sauce will break. Once the olive oil is emulsified, remove aioli to sealed container and refrigerate. (This condiment is fabulous on coleslaw, egg salad ,  etc.

Step2:

Spicy Coleslaw

Ingredients:

1 medium head of cabbage (shredded)

1 large jalapeno, seeded and minced

1 bell pepper, seeded and minced

1/3 cup finely shredded onion

1 Tablespoon lime juice

salt & pepper to taste

Method:

Combine all ingredients in large bowl and refrigerate until ice cold. Serve and enjoy!!
